Just got off the chat with a buddy from Peru, Christian. He has a bold sense of humor, and a taste for South Africans. Four seasons ago, he was one of the cooks working the cafeteria line at the resort. Just another one of the slave laborers the US ski resorts import for the season. Anyway, when he left, Christian told me he was gonna be a doctor. Lo and behold, he is! So rad! It gives me hope that I'm not gonna be a chef the rest of my life. Although I've been trying to leave the restaurant biz for about 5 years now...
